Recipe of the Month:Almond Crusted Fish with Broccoli Rice



  • 1/4 cup (50 mL) sliced almondsMar2015-Emily-Nut-crust-fish
  • 1/4 cup (50 mL) panko breadcrumbs
  • 1 tsp (5 mL) Italian seasoning
  • 1/4 tsp (1 mL) fresh ground pepper
  • 1 tbsp (15 mL) Dijon mustard
  • 2 tilapia fish fillets (about 300 g)
  • 1 tsp (5 mL) canola oil
  • 1 shallot, diced
  • 1 cup (250 mL) chopped broccoli
  • 1/2 cup (125 mL) basmati rice
  • 1 cup (250 mL) sodium reduced vegetable or chicken broth


  1. In a mortar and pestle crush almonds, stir in breadcrumbs, Italian seasoning and pepper.
  2. Spread mustard over fish fillets and coat with almond mixture. Place on parchment paper lined baking sheet and spray lightly with cooking spray. Roast in 220 C (425 F) oven for about 12 minutes or until fish flakes easily when tested.
  3. Meanwhile, in a saucepan or skillet, heat oil over medium heat and cook shallot for 2 minutes. Stir in broccoli and rice to coat. Add broth and bring to a boil. Reduce heat to low, cover and cook for about 10 minutes or until no liquid remains and rice is tender.
  4. Serve fish over rice.
