Recipe of the Month:Almond Crusted Fish with Broccoli Rice
- 1/4 cup (50 mL) sliced almonds
- 1/4 cup (50 mL) panko breadcrumbs
- 1 tsp (5 mL) Italian seasoning
- 1/4 tsp (1 mL) fresh ground pepper
- 1 tbsp (15 mL) Dijon mustard
- 2 tilapia fish fillets (about 300 g)
- 1 tsp (5 mL) canola oil
- 1 shallot, diced
- 1 cup (250 mL) chopped broccoli
- 1/2 cup (125 mL) basmati rice
- 1 cup (250 mL) sodium reduced vegetable or chicken broth
- In a mortar and pestle crush almonds, stir in breadcrumbs, Italian seasoning and pepper.
- Spread mustard over fish fillets and coat with almond mixture. Place on parchment paper lined baking sheet and spray lightly with cooking spray. Roast in 220 C (425 F) oven for about 12 minutes or until fish flakes easily when tested.
- Meanwhile, in a saucepan or skillet, heat oil over medium heat and cook shallot for 2 minutes. Stir in broccoli and rice to coat. Add broth and bring to a boil. Reduce heat to low, cover and cook for about 10 minutes or until no liquid remains and rice is tender.
- Serve fish over rice.
